Summary:In this book by Raul Lody, the proposal is to try Bahia for the taste, the mouth, for the cultures mixed over time to the culinary wisdoms. Understanding Bahia not only for its popular and traditional festivals, known as "fiestas de largo", but for the smell, the perfume of palm, clove and cinnamon, the taste of shrimp and acarajé, as the author wants. It is a cuisine with a strong presence of peoples and ethnicities, and is also the expression of a varied universe, which depends not only on the mixture of ingredients or specific quantities, although this is obviously of great importance. What stands out in this kitchen is the affective understanding before the food, that mixes stories, conquests and transmutations capacity: the history served in plates.
