It is a cuisine with a strong presence of peoples and ethnicities, and is also the expression of a varied universe, which depends not only on the mixture of ingredients or specific quantities, although this is obviously of great importance. What stands out in this kitchen is the affective understanding before the food, that mixes stories, conquests and transmutations capacity: the history served in plates.
