Summary:This book presents the local cuisine of women cooks and rural families from the El Águila ejido in the municipality of Cacahoatán, Chiapas located in the historic region of Soconusco, on the border between Guatemala and Mexico. Part of their traditional diet is shown with ingredients such as corn, pacaya, chayote, among other local products from their productive systems such as the orchard, coffee plantation and milpa. This document offers not only to know the local cuisine through various recipes, but also to recover and revalue its food culture
